Because IMAX uses much older technology for video storing, film (like, physical film). if each frame is a 70mm film piece, at a frame rate of 30fps you're taking THIRTY INDIVIDUAL 70mm frames for a single second of movie, and this doesn't include all the stuff you'd trim out during editing. Hence the camera HAS to be big and bulky. the loudness is because regular digital cameras don't have moving parts (modern mirrorless ones literally simulate shutter noise with speakers). IMAX cameras have to move giant mile long spools of film through them whilst recording, and moving parts make noise. Hence why most directors and filmers agree IMAX resolution isn't worth the hassle. only the biggest name and budget studios and directors can afford to use it, because its part of their brand.
