The problem with any kind of "I just want to learn" thing is that for you to be useful they first need to teach you, as you're literally there because you want to do things you can't do or aren't familiar with doing at that level/context, so your free labor actually costs them whatever time/focus/productivity that they have to redirect to you. That's basically the dilemma here, and it usually ends up with you not wanting to work with those that would want to work with you. Because they're either clueless, or want to take advantage of you without you being in a position to learn anything. If you're willing to do cold calls then why not look if there are any call centers you could work extra at? Or a local business looking for help on weekends? Those things might not sound like they're on the path to becoming the next famous startup founder, but they actually are solid experiences that entrepreneurs need. Having that confidence and experience facing customers and sounding charming enough to keep people talking etc. As far as LinkedIn messages you don't need to do that for others (and they often use AI nowadays anyway), rather you can invest in your own LinkedIn profile. Go to local startup, business and tech meetups, get people to connect. Learn how to grow engagement by posting relevant news and commentary that comes from your genuine interests etc. As far as coding you can join GitHub projects and help grow your standing in the FOSS community, really establish that public history of producing the best results and being able to work in teams. Also release some code of your own that other people actually want to use, to show your ability to grow without breaking APIs and library calls etc.
